I'm looking for some "serious" anime that doesn't rely on cheap gimmicks or fanservice, as well as materials for my yet-to-be AMVs. Something like Cowboy Bebop, Blue Gender, Witch Hunter Robin, Ayashi Ceres, X, Patlabor, Noir, Arjuna and others. Mostly, stuff that are released since 2000.

Can anyone recommend me what anime I should watch?

That, Blood: the last vampire and D are the only vampire related animes I can think of now that fits your requirements.

You could try Record of Lodoss war, it's an "older" one (pre-2000), but one of my favorites. Crest of the Stars and Senkai no Senki (sorry, I forgot the English, "Battle Flag of the Stars" or something) are also very excellent.

action, thought provoking, male, female, romance, self-awareness ... a lot depends your intrest's - I've alway's liked TW's Naruto myself^^
