Cowboy Bebop
Outlaw Star
Akira
Trigun
Noir
Crying Freeman

theres probably others i just dont know any of them.

Ayashi no Ceres has some gun fights. Yu-Gi-Oh! would have some good gun fights if 4Kids weren't stupid.

I've only seen trailers, but City Hunter must have tons of gun action in it. Creator Tsukasa Hojo is reputedly a gun fanatic.
