Not only does that apply to females, but also to males. What about all the bishounen out there with huge eyes? And I doubt there is anyone with naturally violet/orange/gold/etc.-colored eyes. It's the same with hair: no one has natural blue/purple/pink/etc.-colored hair. Really, I think the mangaka just decided to do that to make the characters unique in appearance...
Naturally violet eyes do indeed exist. They're just extremely rare. In fact, Elizabeth Taylor is known for her violet eyes.

The reason I'd always heard of for anime characters looking the way they do (ie, not Asian) is that early anime was inspired by early American cartoons, like Mickey, in which the characters had gigantic eyes. The anime we see today has evolved from those early stages, so it would make sense that since it was originally modeled after American cartoon style, that the characters would tend to look more Caucasian.
In an interesting aside, it seems that many American cartoons are now modeling their character designs off of anime. We inspire them, they inspire us. Isn't art a wonderful thing? :)

(PS. Roy Mustang looks Asian. :D)

Dunno 'bout violet eyes,but I've seen a girl with Yellow eyes :shock: Those might've been lens,or somethin' like that,but hey -- it's still strange :?
