If you want fast epic rock songs with no vocal tracks, check out some Apocalipta (spelling?) songs. They got all that but they also got some symphony sounds mixed in as well.

Umm, perhaps Ruiner by NIN? It's a really awesome song and changes quite a bit...a lot of NIN does though, that's just the first song that came to my head and I think the lyrics could go well with bleach too.
