Most of the stuff by Yuki Kajiura.. definately.

I'm also a fan of the openings for Tsukihime(woot kitty arcueid) and Higurashi no Naku Koro ni :D

Yes, Yuki Kajiura is great. Love his .hack music.
Scarlet - opening to Ceres is soooo relaxing, along with Wolf's Rain's 'Gravity'
BoA's Duvet for Lain I likee
Lilium [Elfen Lied] too.
Opening themes to Hellsing and X/99 the series are really good too.

Guess I'm a sucker for theme music :roll:

I think every anime i've ever seen had great ending and opening themes :wink: one of my favorites as a i recall is Saikano/Rurouni Kenshin :)
