I'm also a fan of the openings for Tsukihime(woot kitty arcueid) and Higurashi no Naku Koro ni

Yes, Yuki Kajiura is great. Love his .hack music.
Scarlet - opening to Ceres is soooo relaxing, along with Wolf's Rain's 'Gravity'
BoA's Duvet for Lain I likee
Lilium [Elfen Lied] too.
Opening themes to Hellsing and X/99 the series are really good too.

Guess I'm a sucker for theme music
