Jing King of Bandits: his bird Kir turns into some kind of weapon, which really disturbs me.

Dang, sorry for double post, just remembered One Piece: at the beginning of the Skypeia arc, the gang has to chase and catch a purple parrot-like bird to help navigate to Skypeia. At the beginning of the series, Luffy tries to catch a bird in the air above his boat and gets caught in the bird's mouth (3rd or 4th ep??). In the Alabasta arc, one of the king's advisors is a man-bird. Oh, and in the same arc, Vivi's bird Karu (?) has some really good scenes (he gets drunk, he fights, he runs, he gets half frozen, etc.) throughout the arc.

There's more, I'm sure, but can't think of any more right now.

Naruto episode 101 (the spoof spoiler for Kakashi's mask) has a bird that flies around every five minutes screaming "aho!" (idiot)

Dragonball (not Z) always has birds everywhere. They all look like pteradon half-breeds.

Cowboy Bebop Has various scenes with a bird owned by viscious, ad I think it's in ep 25? when, OH NO! THE BIRD IS A BOOOOOMB!!!!!

Would people in chicken suits be useful to your project at all?

Lost Universe disc 2 and an episode of Galaxy Angel both features people in chicken suits...if you have any use for that, I could find out the episode numbers for you.

I didn't see anyone mention air gear but it uses crows as [censor] markers and then there are a couple of other birds throughout the series.

Now that Inkwolf mentioned chickens, there's an episode of Ranma 1/2 season 2 about a magical chicken that refuses to leave Shampoo's head (God that anime is stupid - it's still really funny, though)
