Spiral has a neat Piano scene in it.

Actually, I seem to remember Spiral having several piano scenes...one of the characters is a concert pianist.

At the end of the Read Or Die OVA, there's a guy playing some sort of piano/organ/keyboard thingy.

In Sugar: A little Snow Fairy, there's a scene where she dances on the keys--it's in AMV Hell 4.

In The Gokusen, there's one scene I remember (possibly more) where the teacher plays a piano with boys singing behind it.

And if you can't find enough piano scenes in actual anime, The Triplets of Belleville has a few cool piano scenes.

Marmalade Boy has lots of piano scenes, with Kei being a pianist. You also see him composing at some point.

There's some pretty good piano scenes in Big O aswell.
