Just how often do they pop up in anime anyway? I can only count three at most.

I have a series (name escapes me right now) and the show is all about twins actually

At least 4 sets of identical twins in just the one show.

That would be Futakoi. There are 6 pairs of twins.:D
I guess this anime is the first thing that comes to my mind when I hear "twins".^^

Bingo !! yeah I was sure it had 4, couldn't tell if the number was correct.

I guess there is also Futakoi Alternative too (guessing here, I am not wandering my stash right now).

Yeah, ok, that's an exaggeration. Alt. only focuses on one pair, and the other five are just... there.
