Inuyasha - 4th ending
Fate/stay night - both openings
Elfen Lied - opening
Chobits - opening
Monster Princess - opening and ending
Hayate no Gotoku - second ending and second opening
Tengen Toppa Gurren Lagann - all openings
Higurashi no Naku Koro ni - season 1 opening
Code Geass - Ep 24-25 Opening
Black Lagoon - opening
Melancholy of Haruhi Suzumiya - opening and ending
Lucky Star - opening (and ending depending on how wtf it is)

Death Note had a weird affect on me. At first, I loved the first opening and ending, to the point where I listened to it regularly. But then, I seemed to grow out of it. Then the scond opening and ending came and I absolutely dispised them. The music sounded atrocious to me. But gradually as I watched more, I got used to it, and eventually I actually started to sing along.
Death Note awakened my screaming death metal side.

If you're looking for footage for your AMV's then Kanon and Full Metal Panic: Fumoffu are examples of openings with great visuals, but not so catchy music ^^;

Ah! My Goddess - Season 1 & 2 OP (I can't pick between the two. D: )

Trigun's OP also gets an honorable mention. It's the only song from an anime that I keep on my iPod. :O
