Quoting for truth.

I must disagree with this.

Sure there are a bunch of fan pandering anime and manga, but there always has been.

But off the top of my head I can think of several anime, manga titles that have done something different and are not specifically catering to otaku.

Tokyo Zombie
Detroit Metal City
20th Century Boys
Pluto
Umezu is still making non-ordinary awesome stuff
Dragon Head
Shintaro Kago always makes stuff you've never before seen. (And it's really cool)
Cromartie Highschool (if a bit old... I wish it was still being released here)
There was a new anime released that was about an old lady who owns a bunch of cats.

Though these are very good and very different, they do not contain the massive amounts of moe and fanservice you typically associate with pandering to otaku.

Perhaps you just need to look a little harder and try to find new things?

Never really said anything was wrong with classics/older stuff... Said it seems to be heading in that direction.
"The people cannot be [...] always, well informed. The part which is wrong will be discontented, in proportion to [...] the facts they misconceive. If they remain quiet under such misconceptions, it is lethargy, the forerunner of death to public liberty. What country can preserve its liberties, if it's rulers are not warned [...] that this people preserve the spirit of resistance? The tree of liberty must be refreshed from time to time, with the blood of patriots and tyrants."-Thomas Jefferson

Going to /a/ you'd think key and kyoani are the only companies producing these days. but honestly the past few years have been some of the most diverse I've seen in a while.

Every day, I wake up and think "I hate myself. I want to die. I should just kill everybody."

But I never really get around to that, so I make AMVs instead.

Just so were clear.

This is probably true but sifting through all the garbage out there and finding something like: http://en.wikipedia.org/wiki/The_Drifting_Classroom is like trying to find a needle in a haystack these days. Oh, and just cause its releasing more content doesn't really mean its new IMO for a few of the things you listed.

Just feel like stuff like this is becoming fewer and farther between.

I only said that cause it just feels like this was the reason I was slowly withdrawing from anime/manga. I already know about most of the things you listed except the last one and whatever pluto is. BTW if you know some other stuff worth checkin out like these PM me em  . I really liked the one I linked to above though, probably still my most favorite manga to date.

I started in 2006, too! This December will be my 3 year anniversary of registering on Boochsack, which is where I uploaded my first AMVs <3 But anyway, I go through off-and-on stages of wanting to make AMVs and not wanting to. When I started making them I used WMM and would make, like, one a day or something crazy. They weren't very good, but yeah... I did that until I made this REALLY hard one, and then quit for, like, 10 months out of frustration XDD Then I made another, then quit again. And then after a few more months I slowly started to get back into it, and then when I got Sony Vegas I started being really into them again c: Now it's sort of just a side-hobby and not my main focus like it was, so even though I don't upload one every week I still make them. Just not as much. And I have ideas for them ALL THE TIME but I work so hard on them that it gets tiring sometimes... I'm currently making an AMV with an anime I've never used before, so that'll probably open up a whole new chapter in my AMV making life c:
