You just... do it, I guess? It's a perfectly reasonable concern - environment and fitting in is every bit as important, if not more important, than qualifications and salaries etc. It might be good to try it out or get advice from people who actually work in that kind of environment first, though. There is the whole "you won't know until you try it" aspect that's worth considering. But if you KNOW that you're uncomfortable, no shame in turning it down.
I'm suspecting I may be in the same sort of situation a couple of years down the road. People seem to encourage me to work in an academic environment, where I do well and seem to have good qualifications, but I'm becoming increasingly uneasy with the work situation and people around me. Was worth a try though.

Think of it this way: the smaller the place is, the more likely your influence can change the general culture. My current job was overwhelmingly professional-looking for a while, but as I got to know more people there, it seemed to open up and seem like really great, fun people to work with.
