Basically you're looking at the entire duration of the video compressed into a single image. Each pixel in width is a single frame of the video being scaled down in the X-axis into a single pixel width. Doing this gives you that cool barcode pattern.

So, longer videos with a ton of cuts will end up looking extremely chaotic and crazy (like the RoS videos). Whereas shorter videos with fewer cuts will have very wide bands of color and movement (like the Eidolon example). Videos that have consistent color schemes and color changes will have that color change actively visible in the image (like the And We Persist example). Or, in the case of Hsien's Sex & Caramel video, you get to see how motion really flows throughout the entire piece.

I will admit, it does tend to work a little bit better with movies. A movie, compared to an AMV, has WAY fewer cuts per second, and more importantly, longer scenes of consistent color. With AMVs, we don't usually tend to worry about color continuity. We pick shots that either move the story along, sync well with lyrics/beats, etc. I think overall it's an interesting exercise in looking at an entire video in a single snapshot.

EDIT: One other question, since each frame is being compressed to a single pixel width, what column of pixels is being sampled?

Do you mean, what column of the original video? If so, all of them. As I said, the entire frame is scaled down in the X-Axis until it's 1 pixel wide. So essentially you get an average of the entire width of the original frame.
