Of course it changes all the time but right now I'd say Hemisphere, the opening theme to RahXephon, and just about every other Maaya Sakamoto/Yoko Kanno combination.

That's a difficult decision. The theme to Excel Saga sticks out in my mind as my favorite, if I had to choose one. Although, the entire Cowboy BeBop soundtrack (movie and series) and certain selections from Escaflowne rank an extremely close second.
