Nu-metal is really not something that usually comes in the long format.
As far as rock - hell, there's a lot of long material I'd classifiy as rock that is weeelll over 6 minutes long. The classic example I always bring up (for obvious reasons) is King Crimson, which has a massive selection of such stuff. But then, it's nuovo metal, not nu-metal.
The previously-mentioned Tool is also a nice suggestion (naturally, it's the band that's musically closest to King Crimson).
Zappa has a massive selection of (mostly ridiculously funny) long songs and instrumentals, and much of the 70's progressive rock movement indulged in long opuses. You have a huge choice, lest you insist on this nu-metal thing...
