Three of my favorite covers are both done by Metallica. Astronomy (Blue Oyster Cult), Tuesday's Gone (Lynyrd Skynyrd), and Turn the Page (Bob Seger). Astronomy is probably my favorite cover ever.
Also, Adagio did a great cover of Led Zeppelin's Immigrant Song.
