ok well excel saga is kind of a weird anime there is no realy plot progression except for predro until about ep 23 or 22 i can't remember but it is a funny off the wall anime i would recommend that you don't start watching anime with excel saga its not a beginner anime but i would highly recommend love hina if you like comedies
the final episode pwnz.... plus you should get End of Evangelion if u havent seen it yet ... it clears up alot of un-answered questions when you've finished the series. 
) oh the site and they'll tell ya everything. though with half of what people will tell you, its all absed on perspective and how you interpret it. eva is one of thoughs things where many questions dont have one set truth
. anyway, with eva, ya first gota make sure that ya understand the series (ya can forget the last two epps, for now), then watch end of eva and realy consentrate on what the hell is going on, you'll understand it. oh and, i cant exactly remember but it might help if ya watch it with the audio comentary. though dont watch the death and rebirth audio comentary, well, not unless ya feel like geting pissed off by amanda win lee. but do watch death though, it'l help ya understand everything, well, itl help ya understand theoriginal epps 25 and 26 more than end of eva, but it'l help
