Nah...there's three big exceptions:

SD (Super Deformed) Gundam - Mostly just comedically odd shorts
SD Gundam Force - ...crap...plain and simple
G Gundam - This is a universe where, strangely enough, gundams are used to AVOID warfare (and the gundams therein aren't so much military devices as super robots...not to say that's a bad thing...if you thought G was over the top, go take a look at the infamous Texas Mack)

Anyways for shows not covered:

Armored Trooper Votoms, from what little I've seen, has quite a bit of military to it:
The main character, Chirico Cuvie, is an ex-soldier who wound up finding out a bit too much on a military operation and is now being hunted by them.

If the anime is like the manga, which I read some of a long time ago, then it's perfect. Plus what's not to like about a series where the giant robot gets, not a assault rifle, but an immense revolver?

Gunparade March tops the list there for me. Can't belive nobody's mentioned it yet.

These don't all necesarily have major characters from the military, but there is a strone military precence there.

Blood: The last vampire. (It's on a military base, so sort of)
Evangelion
FLCL (eyebrows guy)
Full Metal Panic
Grave of the fireflies (ok, not really the focus, but it's there)
kenshin (some of the episodes)
Laputa (the air force, I suppose)
Mahoromatic (Vespar counts, I think)
Princess Mononoke (you never said <i>modern</i> military)
Nausica
Kokoro Library (only in episode 11)
Saikano
Blue Sub #6

I wasn't going to include space shows, but since you did, I'll add a few more.

Crest of the Stars


I would say Patlabor is police, not military, so it does not count.

Gunparade March definately tops the list though.

No one's mentioned any of the Macross series? How odd.

But you mentioned Evangelion - would this open the door for more big robotty stuff to be included? Like Gunbuster, Raxhephon, ... there's a whole lot of mecha anime based around military themes ... I'd guess most of it is.
