Vash's/Knives' Angel Arms - Unwieldy, huge, glowing, uber guns. 'Nuff said.
E.G. Mine (Trigun) - WTF? What a stupid attack mechanism. He is just a giant ball of spikes.
Wolfwood's Cross - Awesome gun but I would never want to use that thing.
The Bunny Bot (Burn Up Excess) - Again, effective but I'm not using it.

King Of Bandits Jing: Jing uses his bird, who attaches to his arm, to fire off something called a "Kir Royale".

The sword-belt in kenshin (used by chicken head)
The ring-laser Mia has in Vandread
The cane-rifle Alex uses in Last Exile
The plunger of doom used by Peorth in the Ah My Goddess Movie. Tap the plunger down, giant lightning ball falls from the sky. (ok, it has a name, but I forgot.)

The manga for Alita has so many unique weapons, I won't even try to list them.

Grenadier has that one gun that the clown uses. There's also the "Flash of the Demon" which was used to do some stuff to people.

Almost forgot... the Gratan used by Grandis and her gang in Nadia: The Secret of Blue Water ranks up there as weird and a weapon... Hard to categorize that thing.

Jakotsu from "Inuyasha" uses an odd 'snake-sword' that has several blanks linked together to create an almost whip-sword... thing. Yeah. ^^;

Not really weird, but funny as all hell: The witch in the first episode of "Witch Hunter Robin" had the weapon of tripping people.
