Anyone know what anime has a lot of monkeys and/or monkey-related humor?

Er...dbz? Mostly apes (a few monster-sized ones, and the 'normal' one that hangs around 'heaven' making 'ooh' sounds).

Saiyuki - Goku is constantly being compared to a monkey, and there's an episode where the gang is followed, spied on, and later attacked by a mob of little monkeys.

Rumiko Takahashi sometimes uses monkeys. Monkeys appear every now and then in Ranma 1/2. There was also that episode with the missing Monkey-God in Inuyasha.

During a large part of the "Noa's arc" mini-series of Yu-Gi-Oh, Tristan is turned into a cute little robot chimp.

You'll probably find some random episodes in Pokemon - I know there's a girl with one in the begining of Pokemon Movie 3.

In Mew Mew Power, or Tokyo Mew Mew, one of the girls, I think the yellow one, draws her power from a monkey and as such, has a slightly monkey influenced outfit.

In Fruits Basket, Ritsu-chan-san's zodiac animal is the monkey. So Ritsu turns into a monkey. I don't remember exactly which episode, but it is in the last four.

Oooh here's a good one: There's an entire episode of Get Backers where they're up against a band of monkeys! PLENTY of monkey footage there. The monkeys also appear in a slightly earlier episode but only long enough to dog-pile on the guys in a lake. If you can't find the episodes in online guides then sometime I can find which eps they are.

Yeah, but that's like one, two episodes tops, and I think he's a monkey for about five seconds, if that.

"Saiyuki" is the Japanese name for the old Chinese legend of the Monkey King. The monkey's name was Son Goku, which explains the references in the anime. More about that here.

On topic, there is an old movie by the name of Alakazam the Great. It was released in 1960 and might be the first anime movie ever made. It's a near-literal version of part of the old monkey-king tale. Osamu Tezuka was involved (direction, screenplay). It has many scenes with monkeys.
