The reason I know this is because that's my sister's video, and I'm the one that cleaned up the footage and encoded it. Those KH clips were the nastiest ones. I had to do supersampling on them and then a couple of rounds of deen to make them look decent. IIRC, most of them were 320x240 pixels or thereabouts (with letterboxing). The battle scene and beatbox source was like 640x352 or something, so it didn't look nearly as bad (this one definately came from a game rip at some point, though, but not from her disc; if it wasn't a game rip, it was some sort of unholy capture method).
I remember that using the Extractor method on KH did come up with a 1+ gig SWF file. I would suppose that's where the cutscenes are, but I'd have no idea how to get into it. Not to mention that I don't even know what format the video is in - I would suppose it's MPEG-2, just like most normal PS2 games - but I don't know for certain.
