Dragonball Z, Cut it off at the end of Namek and make the end more dramatic, somethin like this....
Goku knows he wont make it to the ship in time, he fire a huge Kamehameha at Namek, Frieza is shocked beyond reason at why and goes to run off, but Goku grips his arms up from behind and forces him down to the surface, they're standing there, Goku with a calm in-peace-with-himself look on his face, Frieza panicky with a OH-SHIT-IM-GONNA-DIE! look on his, Frieza pleads for Goku to let go but he stands there still, Frieza's tells him that he's crazy, he'll die to and Goku simply replies "whatever it takes", Goku see's the Capsule ship(along with a Ginyu Pod) leaving and he closes his eyes and you see a distant shot of the ships going there seperate ways along with the planet exploding, on a lighter day you Gohan and the others already wished back having a little cook out at the Capsule Corp Gohan and Chi-Chi are looking into the sky, while else where you Vegeta's ship land on a regular planet, and the people(not knowing who he is) pull him out of his life support, and take him for medical attention.
10 years later, DB continues later on with a 15 year old Gohan and Videl going to there first tournament together, where Gohan steps into the ring waiting for his unknown opponent, everyones cheering him on, then a mysterious cloaked man comes into the ring and in a familiar voice puts his white glove on Gohans shoulder and says" Been a while huh?" Gohans eyes raise followed with a smurk on his face as the bell sounds for the fight to begin.....whew! hows that for a nice difference?

Hmmm...I can't think of anything major I'd change on Zeta...ZZ on the other hand (...given ZZ picks up right where Zeta leaves off, I'd say I should be able to count it under package deal)
-Completely revamping the Shangri-La arc...let's drop Judau's 'Grand Theft Zeta' attempts to just one or two...give Yazan back his dignity (the man goes from being a coldblooded thrill-killer in Zeta (...seriously. He fights for the sheer thrill of the fight.) to a freakin' clown in ZZ...that ain't right...let Bright finally do what he does best...take the unruly kids down a peg (Judau was BEGGING to get smacked...I still hold out hope that Bright wailed on him with a belt like crazy when the show was focused elsewhere)
-Complete removal of Gemon Bojack...dude...seriously...you're doing nothing for the story...be a dear and die now.
-Reduce the show's a-bit-too-blatant lolicon marketing (Puru was bad enough, but after watching and seeing panty-shots from Leina, I began to wonder what the Hell was up with the animators on this show.)
-Let Haman die with dignity...it's a shame. She goes from being such a fearsome contender in Zeta to smashing herself into a wall in a failed attempt to ice Judau...dammit woman, what happened to you?
-OK, let's try and make Beecha and Mondo useful this time around. If Tomino could make Bruno and Jacop go from total losers to pretty enjoyable characters, he should be able to help Wingus and Dingus here...
-If Leina's gonna die, have her stay dead! Seriously Sayla...how the Hell did you pull THAT one off?
That's just a few things, really...there's so much that half needs.

Yeah, I'd definitely fix Fruits Basket so that a second season could be made without contradicting the manga. I love the series to death as is, don't get me wrong, but if they ever were to make a second season off of it, it would either have to diverge from the manga in a few significant ways, or be really awkward if it tried to follow the manga anyway.
I'd also expand X a little bit. The character development was so good that I just wanted to see more of it, and a few things happen in the manga that would be neat to see animated (mostly just more character development stuff). Depending on how/if the manga ends, I might change the end of the series too... although I think the series' ending is pretty fantastic as is.

I would re-do Witch Hunter Robin so that Robin and Amon would be more explicitly "a couple".

I'd do three:
Love Hina
First off, the show would be 4 seasons long, meaning 100 to 105 episodes long. It would actually FOLLOW the comic this time, and would cut out most of the unneeded junk in volumes 12 through 14.
If you did it following the comic exactly, it would end up being 118 long, by the way Ken Akamatsu wrote it - one chapter per episode, but it started going downhill fast in 12 by stretching things out, only to reemerge pretty well in 14, though still stretced out.
Ranma 1/2
Would not touch most of the show until season 7. That was just bad, and would need to be changed drastically. The show'd probably run another season after that, so the last two seasons would finish volumes 24 through 32 easily. The only thing about those stories I'd change would be possibly taking out the characters of Akari Unryuu and Kontatsu (they were just ways to give Ryouga and Ukyo pairings, and they were pretty flat). The final episode would have 2 scenes: Ukyo and Ryouga each reaching for a drink without looking, griping, and bumping hands, finally noticing one another (okay, so I had to make 'em happy SOMEHOW); the other would be Kunou sobbing over the Akane, and Nabiki treating him to a drink. Of course, from there what happens to *AHEM* will stay true to the comic (I ain't giving THAT much away).

Simply put, it would follow the comics much more religiously. Not that the show didn't, but I mean in the pacing. The Saiya-jin Saga would be cut by about 10 episodes or so, Furiiiza would be shortened like mad, cutting out most of the episodes involving the fight between he and Gokuu, and wouldn't include Garlic, Jr. The show'd last until the end of the Cell Saga, where Toriyama wanted it to end: Gokuu's dead, Vejiita'll never fight again, as he said, Trunks can take revenge on the Androids in the future, and Gohan is God. The one thing I may change is cutting the last episode of the Saga with Trunks killing Cell in the future in half, so that we can see what becomes of everyone afterwards: 18 shows up at Kamesan'nin's house waiting for Kurirrin (it's not mushy, she just needs a place to crash, what with having no home and a dead brother'n all), Launch finally finds Tenshinhan, Vejiita starts to take act (marginally) more fatherly, Yamucha meets girls (always does), have Mr. Satan riding through town in a parade with a 10-year-old Videl (she'd watched the fight on TV, and asks her dad while on the float, "It was that golden-haired boy that beat him, wasn't it? I knew it. Someday, I'm gonna meet him."), finally flashing forward to Gohan and Videl's wedding; Gokuu lifts his hands from Kaio-Sama shuolder after watching this, then he, Kaio-Sama, Jeffrey and Bubbles go off to train or visit Granpa Gohan. In all, the show would be 100 episodes long, not too much, not too little; just perfect for the DBZ story.
Those're my three; may Cartoon Network, Fox, or somebody other than Disney please get the rights to remake those so I can jump on top of it when I'm in NY as a screenwriter!
