The difficulty about zombies is that the two factors that make them terrifying are often ignored in anime. Zombies are not frightening because they're terribly dangerous. Their status is accurately reflected in rpgs where they usually rank somewhere between a ladybug and a wolf. They are slow, they are stupid, they are disorganized and they do not use weapons.
No, Zombies are scary because they used to be human. The hideous thing lurking towards you moaning for brains might have been your wife, your best friend, your mother or just the milkman. You might have spoken to that person that day before.
You may have had a vacation planned. Now, this person wants to kill you, but not because it's you. You're facing an empty killing machine, not an effective one mind you, but you see a loved one (or a neighbour or whatever), and no matter what you do you can never make that person come back.
He or she is dead, or lost, but the body continues to move. This is one of the most horrible situations imaginable, and some movies do actually show this dilemma, albeit not very well. The second feature that makes zombies interesting is their remorselessnes. They will continue hunting you no matter what. Wolves you could hope to scare away with fire, Aliens could perhaps be reasoned with, you might convince an ogre that you were a minor deity, and even though you have little chance of actually doing any of the things listed, the faint possibilities still exist. There is always some plan of action other than killing the opponent. With zombies, there is no alternative.
You can't hide from a zombie, as he can wait indefinitely while you have leave any hiding place sooner or later. Zombies are like ants, a wave of mindless death washing away anything that crosses its path. Unfortunately, for the most part, zombies are just cool looking walking corpses that the hero can plough through, machine gun rattling and chainsaw shrieking, which is why zombies aren't awfully popular anymore.
