I forgot Descendants of Darkness (Yami no Matsuei) had some bloody scenes. Some of them where a bit sadistic though.

Jin-Roh also had some bloody scenes but it was a more realistic gunshot kind of bloody.

Ninja Scroll, "Club-'Em-To-Death" Angel Dokuro Chan, Fist of the North Star, Berserk. And the 26th episode of Excel Saga, of course.

Also, if you can, you can check a new vampire series Karin. It's about a cute vampire who seemingly has TOO much blood so she ends up giving her blood to her "victims" (and yes, that's considered a reverse vampire). She does bleed a lot though.

Well, the bloodiest anime i have seen are:
Berserk, Elfen Lied, 3X3 eyes, Devilman, Hellsing (not really that high on bloody, but still), Ninja Scroll (the series a whole lot less bloody), Samurai X, Dokuro-chan.

Although there is a nice deal of blood in an anime from which you wouldn't expect: SaiKano. There is nothing like seeing on of the most lovable characters coughing up a pool of blood, or somebody blowing their brains out right on screen (with a nice spray of blood coming from his head).

The Samurai X OVA's were pretty good and the movie Kite is pretty bloody, the directors cut is best.
