Cowboy Bebop and Outlawstar are pretty good ones too. Esp. Cowbow :D

I'd go with Yu Yu Hakusho, Trigun, maybe Fruits Basket. Its got a lot of comedy even though there is not that much action. um..... Chrono Crusade is pretty good.

Vandread -slightly older
Beet the Vandel Buster - new
Bleach -new
King of Fighters: Another day - new
Fruits Baskets (seriously) - older
Macross Zero - older

try shaman king it's pritty good or if you want drama AIR or kanon there really sad at the end though

Rorouni Kenshin is pretty good. I watched it religiously.
Wolfsrain is awesome. Watched that religiously, too.
Never cared for One-Piece.

Fullmetal Panic and Exel Saga. They both have weapons and war and stuff, but also have comedy, like FMA does.
