I don't think I can recommend ONLY watching the beginning. IMO, it starts to turn dark when they reveal the fourth child and they start delving deep into past events around episode 20+. The only real problem people have are with the final 2 episodes.
So the first eppisode with you know, shinji screaming at his father, rei, barely able to walk being forced to pilot the eva is "light"? Though the first half is a good action/comedy/drama mix more than anything. Soon as theres that epp where they spend half teh time recaping stuff, then rei recites some wierd poem, thats when things start geting angsty.

The problem most people have with the final two eppisodes is that they are too narrow minded to understand the artistic direction and the relevance of thoughs eppisodes as an ending to the series. Evangelion isnt about a story, its about character.

Ok, I probably should have said episode number 17 since that is the actual episode where the fouth child is revealed. But,

the first episode is "light".

I recommend Bleach and Hellsing for being simply awesome.

For varying amounts of romance I recommend:

Full Metal Panic - It's got science fiction, military, and school all rolled into one.

Chobits - I guess this is science fiction.

Suzuka - This is a school romance anime.

I noticed that none of these anime were on your list, and I think they're all definitely worth watching.

I agree with Full Metal Panic.

Also add Rahxephon, very good series similar to Eva, better ending though, better animation.

Blue Submarine 6: another pretty good action series with a bit of romance in the background.

For humor try Nadesico and Dia Guard, both are a bit of parodies of the scifi and giant mecha themes.
Where did you say I'm going?.... And what am I doing in a handbasket?

You've already seen half the stuff i was thinking about recomending, but i think i can come up with a few (they're shoujo-ai though. Btw, NONE of the series on your list seems truely Yaoi, especially not Gravitation nor Loveless, they're both Shounen-ai..if you like Yaoi, then you like a guy-guy series that has highly explicit sex scenes, which i know isn't in Gravitation nor Loveless.. > > Anyway..)

Yami to Boushi to Hon no Tabibito = I've only seen the first 2-3 eps though, so i can't guarantee much more. (Shoujo-ai. Possibly Yuri.)

Maria-sama Ga Miteru = Again, i've only seen a little of this, but i like this one a bit better than YBHT.

Kannazuki no Miko = Slight Yuri but mostly Shoujo-ai. This is a great Shoujo-ai series. It has a really sad ending (not gonna spoil it) that left me a slight bit sad and confused, but i think i understand it now. It has great art too, so if you were to make a video out of it, it would be a good choice.^^

AIR = Look into this one look into this one look into this one! It's got a really interesting, really deep story, and some great characters! I really loved this one! (it's straight btw)

There, that's all i can think of^^ (i personally wouldn't look into Evangelion btw. I saw the first ep and if you think that's bad, then you have to look at one of the later eps which some people claim is one of the most brutal (violent) eps in all of anime history.. > > (that's not a spoiler btw, i see it everywhere i go..))

Actually Ai no Kuzabi, Fujimi Orchestra, Kizuna, and Sensitive Pornograph all have explicit gay sex in them and are definitely yaoi.

As for Chobits, I read the manga which is why I haven't bothered with the anime yet. I may watch it eventually if I forget most of what happened in the manga.
