I don't think I'd count myself as someone who cries incredibly easily, but I have found myself tearing up on a few occasions watching anime.
Wolf's Rain - twice. If you know the series, you know the eps I mean.
Haibane Renmei - the end. I was a wreck. Good example of series hitting you emotionally not by being depressing, but by being uplifting. Amazing stuff.

YAY!
I have finally posted! Now I can die in pieces.....
I ment, In peace
The anime's that made me cry... well, Blue Submarine No. 6 made me tear up. And the end of Cowboy Bebop made me wail... But that was because I just finished reading the Demon Ororon. Now that is one sad story.
I LOVE YOU MALIFICUS!!

"RAWR I NEVER CRY OVER ANYTHIIING. MY INABILITY TO RELATE TO SITUATIONS PORTRAYED IN FICTION IS A SIGN OF MY MANLLIINEEESSSS!!!"
All of you trolls who are going about saying you never cry should just stfu and keep it to yourself. No one thinks you're cool because you are supposedly apathetic about things.
There is no psychological evidence to support that crying and happiness are "different levels" of emotion, they just release different neurotransmitters in your brain. There is no deficiency involved; the way you cognitively label something in your brain combines with a general physical reaction and your own expression to generate an emotion - if you want to empathize with something you will. If you don't empathize with a show it's because you're too uptight and macho to express or relate emotion in your mind. It's YOUR problem.
Anyway I unfortunately rarely cry as a result of sadness and what have you, but Grave of the Fireflies and X (to name a couple... there might've been 2 or 3 more that I don't remember) had me tear up somewhat; I wanted to cry during some of RahXephon but I couldn't quite do it. I enjoy a good tragedy way more than a happy show personally, and if a show makes me cry then it's all the better for it in my mind. Shows that evoke an emotional response are teh win!
