Inu Yasha(If you like the on and off love-triangle thing)
Neon Genesis Evangelion
Outlaw Star
Rurouni Kenshin(Although after ep 62 it gets a little boring)
Samurai Champloo
Cowboy Bebop
Princess Mononoke
The Place Promised in Our Early Days (Haven't watched it in a while but it's a very good movie)
Samurai X: Trust and Betrayal(Even better than the Rurouni Kenshin series)

Ok, action stories.
Last Exile: Great Range Murata artwork, complex and action packed scifi story. A bit of romance in there too.
Noir: Lots of action, nice mysterious plot line, hot girl assasins, maffia connections, more gunfight action, a third hot assasin chick, exellent music. How much more could you ask for.
Area 88: If you are into jet fighter aircraft, this is a must see. The artwork is amazing, the air battles are the best in any anime I've seen. The story is a good one, plenty of mysterious plot lines. Funny thing, the Japanese pilot is the least Japanese looking of the bunch.
If you need a laugh,
Full Metal Panic: A fun mech series with plenty of laughs and lots of drama too. When totaly nieve, totaly military Sgt. Sousuke Sagara, is sent undercover to bodygard above average highschool hottie Kaname Chidori, strange things will happen. The second series, Fumoffu, is great too, they dispense with any drama and go straight for the laughs.
Dai Guard: A giant mecha series, but a bit different. Dai Guard isn't quite state of the art, in fact it had been rellegated to being an advertizing prop when the Heterodynes return. All that stands between humanity and total destruction is Dai Guard and its three pilots from the PR department of 21st Century Security. Will Dai Guard save the day, or will the board decide it is to expensive to operate it?
Najicaa, Blitz Tactics: Lots of action and not a bad story but one word really describes this one, fanservice!

I forgot to mention RahXephon. Some say it is a rip off of Evangelion but I don't agree, they have the same basic plot line but are very different. RahXephon is better artwork, a well done story line with a good ending. I don't say it is better or worse than Eva, I think both are very good on their own.
That said, check out the ADV sale going on now, check the heads up thread. Lots of anime for great discounts, Dai Guard complete set for 15 bucks, RahXepon for 54, Noir for 54, several others mentioned here.
