SOmeone mentioned Karin which is my current favorite.

The one that sticks in my mind was the beach one from Maboraho which involves ice cream! I just went  !!

haha, I remember that one.
Here is about 1/2 of them for those who haven't seen it. (3 eyecatches, 1st followed 2nd)

For a simpler eyecatch, I think the ones for Diamond Daydreams are very nice. They use a small image of the girl whose story is being told and real-world images of places in Hokkaido. It really showcases the beauty of Japan, I think.

Although, now that I've seen those Maboraho eyecatches, I'm seriously planning to get it.
If only I understood Japanese. . .

x2 on the FMP

One of my favorites is Trigun (mainly the guitar...but the image is nice looking too)
Scrapped Princess always amused me, because it was this happy/peppy acordion that usually was right in the middle of a serious/dramatic part of each episode.

Azumanga Daioh was also amusing.

on a side note, the eyecatcher for Bubblegum Crisis Tokyo 2040 was just annoying...mediocre(sp) design, and the music (also annoying imo) was about 5 dB louder than the rest of the episode's audio

I liked it. The music of BGC2040 was a big part of its tone, and an eyecatch is supposed to catch your attention. This one helped on both counts.

hmm...well if you look at it like that, then it does its job (still think it's more of an earcatch than an eyecatch)
maybe my standards are a bit high...seing as the first bump I saw was Trigun's

I really liked the Samurai Champloo eyecatches. I'm a sucker for the graffiti art.
