I'll second Trinity Blood - and since it's set to debut on Adult Swim beginning September 9th, it's a great way to check out the series before you commit to buying it. Personally, I like it because of the awesome visuals which are very stylish and well animated. Though I also dig the storyline and characters as well. If you're into vampires, apocalyptic anime, or just "darker" anime in general - check it out.
Also, I highly advise checking out "Judge." It's a little one-shot OVA, about 45 min long or so, about the Judge of Darkness, who upholds the laws of the dead and seeks justice for those that can't find eternal rest. It's quite a bit older, but I love the concept and the story is pretty well exectued, IMO.

Everybody loves Monster, and if they don't we'll just have to beat them up.
I'm very fond of Piano, which is a sweet little slice-of-life story in which absolutely nothing happens. Believable stories win me over when I'm not in the mood for the world exploding AGAIN.
Magical Play, which, like its lead character, is short, cheerful and entertainingly bizarre.
Princess Tutu, which now has garnered attention thanks to a perfectly awesome AMV. Sweet, twisted shoujo series with a ballet and fairytale motif.
If you watch Genshiken and don't say "oh hell, I've done that" at at least one point, then you're not a real nerd. Why is this series not more popular? Everyone sucks. XD

i dont know how popular it is but
Juuni Kokki is a great anime that i dont hear people talk about.
the main character is a high school student who is taken to a strange yet familiar world by a cloaked man who commands powerful monsters.
half of the show is about her finding out why she is there in the first place so i dont want to spoil it. the show involves things like predjudace (i cant spell i think), political corruption, self doubt, and trust.

I recommend that too. It's really good not to mention what and how original ballets are used in this.

I second Juuni Kokki, and my absolute favorite (recent) anime is Fantastic Children. If you like cerebral sci-fi definitely check it out.
For lighter fare, I also liked Gatekeepers.

I just thought of it while replying to a different topic. But I don't see Ayashi No Ceres around very much. Excellent anime in my opinion. Decent amount of violence and bloodshed to keep you going with a solid plot and some excellent character development. Romance plays a strong role in the show as well. It's been a long time since I've watched it so I can't really give you a better explanation.

Thanks for the recommendations everyone, please keep them coming if you think of any more. I'm watching Texhnolyze now, and I've found it really interesting so far. "Artsy" is how I'd describe it.
Trying to get my hands on Genshiken now, and Trinity Blood will be next on the list.

I agree Genshiken is almost an Otaku right of passage for this generation much Like Otaku no Video was a decade or so earlier. Much like Otaku no Video it is a case where it is so outrageous in some ways but you look and you realize that you are a little bit like that. The manga is also fantastic.
Also have to agree with Monster. If you like a show that makes you think, which has been sorely lacking as of late, this is the one. It twists and turns appropriately and can get downright creapy at times. It also refuses to adhere to any of the typical anime cliches. It could have been a live action television show without problem.
Kino no Tabi (Kino's journey) is a great observational peice. It's hard to describe but very much worth watching.
One show that is very good but did not get as much attention from stateside fans wqas Last Exile. It's one of the prettier shows out there despite being several years old now and it does a good job of telling a war story while being very rooted to the characters. The main character entirely defies the angsty pilot cliche and every character remarkably acts their age (the bulk of them ranging from about 8 to 20ish).
And now for an old school selection that have been forgotten about. (sad that a show from 1991 or so is old but its about as old as the average convention attendee now.)
Irresponsible Captain Tylor. You never know if he is a lucky idiot or a genius. Every time you think one or the other something happens to contradict it. It's a great comedy in that it is both stupid and smart at the same time. In many ways it was a bit of a parody of the seemingly endless space drama shows that came out through the 80's.
