Well.....no promise that I spell any of this right.
1) Paranoia Agent's opening theme by Susumu Hirasawa.
2) Berserk's open and ending themes...don't recall who did that.
3) Ghost In The Shell's opening by Origa. Well sung by atleast.
4) Bleach ones are all pretty awesome.
5) Eureka Seven's second opening theme...sorry I've got no names.
6) Juuni Kikko - actually I like all the music in this one.
There are others I like, unfortuantly I'm not well educated in spotting their names in the credits. Anyway, I enjoy most music in animes.

I can't believe no one has mentioned Samurai Shamploo. I think it's opening is kickass. I loved the way that series mixes a little bit of history, action, and hip hop/rap style music. I wouldn't have expected that kind of music to go well with a samurai anime (or any anime for that matter), but it works!
Of course Cowboy Bebop is my other favorite; I used to have this thing for Jazz music...
