I dont know about straight Trucking animes, but for animes for clips...

Bio Hunter: Truck ran car off road.
Lupin The 3rd(adultswim): Truck involved in heist.
New Dominion Tank Police: Entire episode revolving around super big truck.

theres a few episodes in "Getbackers" where a deisel is used, guy driving it supposedly don't stop for nothing.... >_>
