Gits has some nice infiltration scenes with soldiers, nothing really war like though. Pretty much depends on what kind of warfare your looking for. If your looking for stuff like world war kind of soldier battles then as recommended earlier: Saikano is probably good for you. If its anything with a guns and people then check out gunslinger girl, cuz little girls + guns = win. There are some scenes in hellsing involving soldiers too. There are some on full metal panic. I'm sure there are others, I've just forgotten.

Also, if you can find it (tough call since it's not licensed yet) you might be interested in giving a look to the series 'Flag.' It takes place around a military unit set in a near enough future that, with the possible exception of the HAVWC mecha units, it's actually quite plausible (granted the series is kind of light on action, but otherwise.)

If you want realistic military footage it is really quite rare. Gundam seed has a lot of good combat scenes in it of course they involve mobile suits which just arent too realistic. The one that I have been trying to find for years is called future war 198x(which dates it). It's about the cold war going hot.
