I'll add a couple.
Haibane Renmei: An excellent emotional and mysterious anime. No fighting, but great emotional conflict. Who are the Haibene, where do they come from, and where do they go.
Key, the Metal Idol: Is Key actually an android, or is she human? Can she winn the love of 30,000 people to become human? A dark haunting anime.
Planetes: Very good hard scifi about near future space debris collectors. A wonderful love story, and the last few episodes blew me away.
Area 88: Emotional stories of the pilots of a mercenary air combat group. A story of betrayal, treachery, and survival. Great air battles too.

I'm gonna go out on a limb here...
Saikano (She, the Ultimate Weapon) - a lot of people don't like this anime because it's overly-angsty, or so they say, but from your description, this would be a perfect match. It's a romance with tons of emotion, and it delves deeply into what both of the characters are feeling. The entire anime is actually done as a narrative from the main guy's point of view. The personalities of the main characters are probably a lot more realistic than most anime, and there's very little (if any) in the way of zany antics or jokes. Most of the episodes are designed to make you cry, just as a warning (or promise, depending on whether or not you like that kind of thing).
This series tends to be an extreme hit-or-miss case for everyone, so you'll just have to check it out, I suppose.
