As far as Phone scenes with Well known Characters, Kasumi always answers the phone in Ranma. with the exception of a few times when it's Nabiki.

Also Ah My Goddess! has a few as well, if I remember right.

There are some telephone scene's through out the Initial D series, which would probably help you out a little bit

PErfect BLue... there's a lot of characters who spend at least a scene or two on the phone (and one who gets his hand spiked to one O.o)

Azumanga Diaoh has a good phone conversation scene between the characters.

Yep, both the original OAV and the newest series. In the new series, season 1 Ep1 and then there's that season 1 episode where Skuld gives Keiichi boobs and he has to call multiple times.
