Fight scenes!
My absolute favorite top 5 fight scenes of all time are.....
1. Hajime Saitou vs Kenshin
2. Domon vs Master Asia (both times)
3. Vegeta vs Goku (second time)
4. Kenshin vs Shishio
5. Arucard vs Incognito
I like alot more, but it would take too long to write them all down.

Spike vs. Electra (Cowboy Bebop, the movie)
There are also a lot of good fights in Airmaster. Hard to say which is my favorite, though.
Also, Nausicaa vs. the Torumekian soldiers (Nausicaa)
I personally think that the fights in DBZ and Rurouni Kenshin (although I like Rurouni Kenshin) are not all that great. They're too sped up and blurred where half the time you can't tell what's going on, and much of the rest of the time is spent cutting to other scenes or people making rather uninteresting speeches (in DBZ, I mean, Keshin doesn't have this problem really). I prefer fights in which 1) it's relatively normal speed, 2) gravity is a factor, and 3) everyone's attacks are at least somewhat different, to the point where you could tell most characters apart by the techniques they use.
In Airmaster, for instance, Maki (Airmaster) jumps a lot and responds very fluidly, quickly, and naturally to her opponent's moves. She does have a certain set of techniques, which become less impressive as time goes on, but she's always adding to them by learning from her opponents. Otherwise she's rather stupid, but she's a genius fighter.
The other characters in Airmaster have different moves, to some extent. Luchamaster and Kai, for example, have the most similar styles to Maki, but they incorporate wrestling moves, such as more holds. There's a guy who uses his bike as a weapon, and a man with super-long arms and legs. It's a really odd group.
...there's also a video game cosplayer who is a powerful fighter ^^;
