Ok, first and foremost, you have to understand that my tastes can change rather rapidly, so much so that what I say I love one day I may actually be completely and totally tired of the next. This applies to everything about me, not just anime.
On topic, here are a few of my all-time favorites, and as an added bonus, a link to my favorite online anime shop. Also, as per request, I will give a short summary of each, and because I cannot help it, why I like each.
Project A-Ko:: The anime to get me hooked on anime. Probably the most comically violent anime I've seen, as well as the best. The story revolves around A-Ko, high-school student with natural super-human strength. She's usually seen with her friend B-Ko, a bit of a crybaby at best. In comes C-Ko, inventor super-genious extraordinaire, hell-bent on 'taking' B-Ko from C-Ko.
I still consider this one of the best anime out there, simply for it's comedic value. One of the most laugh-out-loud anime, it had me going from start to finish, nearly non-stop.
-
AzuManga Daioh:: This one's a bit hard to describe in terms of plot, especially without totally ruining parts. Suffice it to say, it revolves a handfull of high-school students, and a smaller handfull of teachers. Each single episode is often broken down into smaller mini-episodes, with or without a running theme.
Another laugh-out-loud hilarious series, I've yet to all of it, as it's still being released. Every time I see more, though, all it ends up doing is leaving me hungry for more. However, if you're new to anime, you might be wary of this one-- much of the humor is very Japanese, and even with the incredibly useful translator's notes that come with this series, some of it would still be lost on newbies.

Tench Muyo! GXP:: High-School student (there's a lot of anime based around high-school students) Seina Yamada has the most incredible streak of unluck you've ever seen. He simply cannot perform even the most meagre of tasks without SOMETHING going wrong. But when he inadvertantly gets accepted into the Galaxy Police and shuttled off from Earth against his will, he finds that his unluck can be, when correctly applied, used for the purposes of good.
Laugh-out-loud hilarious (I like comedy). The simple slapstick humor alone is reason enough to get this series, though the humor doesn't end there. Not for younger audiences, however, or those sensitive peoples out there. I don't believe I've seen any nudity yet (this is another series I'm still buying), but there's a lot of sexual humor. Also, I recommend obtaining, or at least watching, the original Tenchi Muyo! before watching GXP, as there are a lot of referances that you'll miss otherwise.
-
Cowboy Bebop:: Based in the future, in space, around bounty hunters Spike and Jet, with Ein the dog, Faye, and Ed coming into play not too far into the series. Most of the episodes are stories unto themselves, though there often are running themes. A damn good series both as a whole, and on an episode-to-episode basis.
Much to be appreciated here. Much of the first half of the series is simply funny, while much of the second half, especially nearing the end, tends to deal with more serious issues. Most anyone and everyone I know who've seen anime have seen this one, and I don't believe I've ever met someone who actually DISliked this series.
-
His and Her Circumstances (Kare Kano):: Buy it for the opening episode, keep it for the rest of the series. High-School student Yukino Miyazawa, a straight-A superstudent, who lives and breaths off the attention of others. Hell-bent on being the best at just about everything, her efforts to be number-one in school are thwarted when she enters her freshman year of High-School. In comes Arima Souchiro, another freshman and flawless student like herself, only better at it. She immediatly takes to hating him, and secretly plotting to 'overthrow' him and be at the top of her class again.
Best romance/comedy, period.
-
Please Teacher (Onegai Teacher):: Tsunami Jones did a pretty good review of this up near the top of this topic.
Another romance/comedy, though much more romance-oriented, this series has, simply put, the most believable characters I've ever seen, not just in anime. There was never a moment when I stopped believing that these characters could be real people.
I really could just go on and on. To list every anime I like, a description of each, and why I like them would simply leave my fingertips bleeding. That, and I need to be getting to bed soon. Believe me when I say, however, that what's listed above is 99% surefire stuff.

ooh ooh, I have one more to suggest. It is new and it was made by the same people that made Dominion: Tank Police, and Ghost in the Shell.
I can't think of the name at this moment, but I will figure it out. I have even seen it yet and I'm impressed by it. Look at the makers, THE MAKERS .
