Neon Genesis Evangelion (already mentioned)
i'd say Dragonball, but i don't even think it's fully released yet... make sure you watch it subbed though, dubbing just makes it not make sense sometimes
also looking into Manga is never a bad idea, it seems that a majority of the time, manga has little to no filler what so ever, at least, at least less than the anime counterpart. this means that it's shorter and quicker to get through and you don't miss anything important... chances are, you'll understand the series better... unless you're reading the FLCL manga, then it's just OMGWTF WAS DAT?!-[keeps reading]

Samurai Deeper Kyo was a huge let down for some reason..
I know what you mean about samurai deeper kyo. doesn't do the manga justice. As for what u should watch next, take a look at RahXephon and Saiyuki (1st dvd of Saiyuki isn't that exciting but the show really starts to pick up after that).

if you dont mind crying al ittle Saikano is fantastic choice.
Other great favorites of mine that I recommend:
Haibane Renmei
Kino's journey
Millenium Actress
They are all very character based and not much action, but I sort of prefer htat kind of anime best. Saikano being my absolute favorite of all.
