I believe there was an actual case of this, and though I don't know if it's the best choice - I got my mom started on anime with JinRoh.

The Birds are using humanity in order to throw something terrifying at this green pig. And then what happens to us all later, that’s simply not important to them…

Depending on the person, here's 3 examples I've shown to people that opened them to watching more:
1) Princess Mononoke: it's gorgeous, violent, and contains environmental issues. It's perfect to demonstrate the level of maturity and imagination unique to anime.
2) Cowboy Bebop first DVD (4 eps): nothing says "cool" better than these episodes, the gateway drug of choice for many film students who never though they'd get hooked on animation.
3) Soultaker first DVD (3 eps): for anyone who wants to see something truely bizarre and unconventional. This is mostly a stylistic example, I've shown this to a couple people knowing that it would blow their mind.

My suggestion would be Azumanga Daioh. The jokes in the show are rather simple so you don’t need to have seen anime before, or know a lot about Japan, to understand most of them.
I have tried it so far on 3 people. 2 of them really enjoyed it and wanted to see the whole show, asking if I could recommend more anime. The third just sat there thinking what the f**k is this But well he has clearly stated before that he doesn’t like anime. So far the only anime he seems to like are the Ghibli movies.

only two animes I've started people on were:
Trigun = I got my brother to watch it becasue I got him interested in Wolfwood's storyline. He love it, and watches that kind of anime now... now I've gotta push Kenshin on him.
Cowboy Bebop: The Movie = Got a friend to start watching anime by asking if they wanted to watch a "kick @$$ action sci-fi about chemical warfare"... he's a strange guy, but he now owns more anime then I do, so yeah...

Well, I first got hooked on Eva... and then had my friends watch Eva and they enjoyed it enough to get into anime. I always thought this anime had the best aspect of everything combined to show newcomers but nowadays its a bit different. Lotsa anime to choose from and so its easier to find someones taste in animation... somewhat.

I was christened to anime with FY and then Ceres, when I was 29.. I haven't looked back since.
I just got my daughter's friend hooked with Ceres and my b/f with Trigun. : P So, guess those work.

Now, don't feel bad. It's not you, it's me. I Don't Like You. -.-

A friend who's into sci-fi, for example, probably wouldn't care too much for Fruits Basket, but they might love Ghost in the Shell. But then another friend may hate GITS and get turned off of anime forever. I guess I'd have to try hard to find a series that appeals to the largest possible market, and so far, I've had the best luck with FMA because of its mix of action, drama, comedy, etc.
