Seriously, though, some series can pull off sequels, but most just go for continuations of the storyline. Now, there are tons that I'd love to see such continuations for (The Melancholy of Haruhi Suzumiya and Kare Kano being at the top of my list), but I'm not sure how many can do true sequels well.
Also, on Evangelion Unit 01's point regarding .hack//Roots, the games, manga, OAVs, and Novels are, for the most part, not actually simple offshots. They all go into the chronology and tie together very strongly to form one series. For example...

I take it, from your post, that you have seen all of .Hack//Sign. Remember the big mosnter that appeared in the end of the series and did something to Sora? That is Skeith, the Terror of Death, a vitally important enemy and plot hook through all of the first game. Through the games, you eventually destroy him and the other seven elements of the Cursed Wave. Your character, Kite, is then heavily referenced in the OAVs, as are many other characters who appeared in the games, but not the TV series. An avatar similar to Kite's is given out as a gift, which ends up starting the whole thing. Then we move on to .hack//Roots and G.U., the second series of games. Herein, the focus moves from Kite to a new protagonist, Haseo, who just so happens to call himself "the Terror of Death" and, in the games, gains the ability to summon an insanely powerful Avatar that breaks all the rules of The World. That avatar's name? Skeith. Oh, and the major villain appears to be a twisted, virus-infected version of Kite. I would hesitate to call the games "Off shots" when they hold so much of the storyline behind The World, both relating to Sign and to Roots. True, they're in a different medium, but they continue the storyline from where it was left, taking it in a somewhat different direction. Isn't that pretty much what a sequel is?
